The octopus is all about tenderness and quality matched up with the flavor of the grill, the silkiness of the beans, and fresh herbs. What do you try to achieve through food presentation? To have dishes really speak for themselves when they are on the plate—dishes should look exactly like they are going to taste. What is your favorite garnish? I like what I call go-to garnishes—flavors that aren't built into the dish but are available to complement. What tools do you use to style gorgeous plates? There are many tools to help design dishes.
