"The cachaça and Bénédictine act as the supporting characters," says Wynn master mixologist Patricia Richards. "And the pear brandy and Amontillado sherry play the dominant roles in the nose and on the palate." The sophisticated, well-balanced cocktail is delicious before or with food due to the dry, nutty finish of the Amontillado sherry, and the Botero menu offers two dishes that complement it beautifully. The first, a tasting plate of Iberico ham, La Quercia prosciutto, Beehive cheddar, and Manchego cheese, also comes with a soft grilled pear. The other is a Hudson Valley foie gras served with warm apple pie and Marcona almonds. "The nuttiness of the Amontillado sherry in my cocktail recipe," says Richards, "complements the caramelization of the foie gras and the almonds." PEARFECTION 1 oz. Sandeman Character Medium Dry Amontillado Sherry 1 1⁄4 oz. Maison Leblon Reserva Especial Cachaça 3 ⁄4 oz. Aqua Perfecta pear liqueur 1 ⁄4 oz. Bénédictine liqueur 1 ⁄4 oz. Simple syrup Combine ingredients into a bar mixing glass.
