Red Rock Casino, Resort & Spa, 702-797-7311; redrock.sclv.com SPAGO Gourmet dishes like smoked- salmon pizza make Wolfgang Puck's original Vegas outpost one of the Strip's best options Rivea TheHotel at Mandalay Bay got a much-needed update as Delano Las Vegas in 2014, but luckily, super chef Alain Ducasse remained (as did the effervescent glass bubble chandelier). Now the transformation is complete, with sparkling, French Riviera-inspired Rivea replacing Mix on the 64th foor of the gold ingot-shaped hotel. Start in Skyfall Lounge with an aperitif, while taking in the sights of the Strip to the east or a faming sunset over Red Rock Conservation Area through the opposite wall of windows. Not-to-miss items at Rivea include crispy socca (the fried chickpea crisp street food snack of the Riviera), tangy Provencal caponata, and a lobster and purple artichoke salad whose vibrancy only rivals the view to the west. Located on the 23rd foor of Mandarin Oriental, the low-lit space provides an elegant respite accented by plush jewel-toned furnishings, live weekend entertainment, and a menu of inventive tapas dishes and custom cocktails, including the bar's signature Golden Leaf martini, a tantalizing blend of Hendrick's Gin, Aperol, muddled Mandarin oranges, and fresh lime and pineapple juices.
