In Vegas, where no food or drink trend is off the table, tea services aren't exactly novelties. Finding a service that adheres to history and authenticity, however, isn't always an easy task—but that's where chef Mark Purdy and Alizé, the Michelin- starred restaurant atop Palms Casino Resort, come in. "Like anything else," Purdy says, "when you start to look into tea, you want to find the best kind you possibly can." Thus, after months spent researching various vendors and blends, the chef has expanded his menu with a collection of five herbal teas sourced from China by the specialty purveyor Seven Cups, as well as one premium aged tea, green puer, imported directly from the ancient planta- tion lands of the Jingmai mountain range.
