At Montilio's Baking Company, a fancy cake is more than just a time-honored wedding tradition: It's a work of art. "We're lucky to have the talent here—perfectionists with creative backgrounds—who are all the best in their fields, and all, truly, love their jobs," says George Montilio, whose namesake bakery business has been in his family since 1947, becoming instantly famous after creating the wedding cake for President and First Lady John and Jacqueline Kennedy. The art, says George, is in the presentation, of course—the visual appeal of a custom cake topped with everything from fresh flowers to gold leaf. The design is then amplified by the taste; with flavors such as olive oil, walnut and coconut, plus myriad creams, mousses, exotic fruit, and spice, there's no palate Montilio's cake mastery team of 11 can't accommodate. While the bakery handles trends with aplomb—social media sightings influence a lot of their wedding requests, says George—it's a business steeped in tradition. Montilio's has created cakes for several presidential administrations, as well as for countless high-profile clients and events throughout the years. Despite the demand, each wedding cake—Montilio's makes 60 to 70 a week—gets the same amount of painstaking effort and attention to detail as the next, from initial concept to first bite.
