Bio-dynamic duo A fter working as soil scientists at the University of Wisconsin-Madison, husband-and-wife team Leslie Cooperband and Wes Jarrell decided to put their sustainable farming knowledge to work. They moved to Champaign and started Prairie Fruits Farm, the state's first farmstead (meaning they use the milk from their own herd) cheese- making facility. Today, they offer eight different kinds of cheese. For the couple, it comes down to quality. "It's about connecting people to the best-possible food.
