Fancy foam and fancier brewing are now part of the fabric of Las Vegas. A TRIO OF BUZZY INDEPENDENT COFFEE SHOPS IS BRINGING TOP-QUALITY JAVA (AND MORE) TO VEGAS. BY SARAH FELDBERG BREWED AWAKENING Type the words "Las Vegas Strip" into the store locator on the Starbucks website, and a forest of green pins sprouts from the map. There are 36 total in the tourist corridor. I counted. But step off Las Vegas Boulevard and a new wave of independent coffee shops is springing up around town, offering caffeine with a side of creativity and character. At Tiabi Coffee & Waffle (iwanttiabi.com), with locations in Centennial Hills and on Maryland Parkway, thin, crispy waffles support sandwich fixings and lattes come in flavors like lavender white chocolate and honey cream with a dash of nutmeg. Henderson's Bad Owl Coffee (badowl coffee.com) has generated international buzz since opening in February with nods to the Harry Potter franchise like a Butter Brew latte and Platform 9¾ sign, but it's the coffee that keeps customers coming back: Japanese-style 16-hour cold brew for the purists and mint mojito lattes for more casual sippers. And true bean geeks are flocking to Coffee Hunter (702-586- 5002), the Eastern Avenue cafe that opened in March. Along with coffee from revered third-wave roaster Stumptown, the shop serves an array of locally made snacks and Instagram-ready drinks like macchiatos in waffle shot glasses and salted- cream cold brew. Co-owner Hunter Hawkins sees a revolution brewing in Vegas. "All of us are a community, and we're here to push this. It's a group effort," she says. "People are expecting more from their coffee." .
