"Austin produces many of the same ingredients found in Northern Italy," explains Parlo, who points to the "gorgeous locally grown romanesco, Tuscan kale," and an abundance of local turnips, plus rabbits, boar, chickens, Dorper lamb (showcased in the lamb spiedini), and beef for the Wagyu bistecca.
