Yet the specialties at Ricard Brasserie and Liquor Bar and Bia Hoi Southeast Asian Street Food—two separate Snowmass restaurants debuting this winter from Executive Chef Timothy Goodell—are all prepared with locally sourced ingredients. Savory plates prevail at both impressive locales, despite the diverse, international flavors. "What I do in all my restaurants is support local farmers and use local ingredients," explains Goodell, who also operates Public Kitchen & Bar in California's Hollywood Roosevelt hotel and owns and runs 25 Degrees, with locations in Chicago; Hollywood; Huntington Beach, California; and Bangkok. Ricard—where antique mirrors, lush booths, and a distinctly European ambience greet guests—will feature classically French dishes, such as oysters, coq au vin, and tuna crudo, as well as house-made baked treats and a carefully curated selection of cocktails. Bia Hoi—a friendly, beer hall-inspired spot with reclaimed- wood tables to encourage communal dining—will serve cocktails with fresh juices and an assortment of Eastern-influenced fare, such as pork belly bao, dandan noodles, and salt and pepper prawns. The two distinct dining experiences diverge, but the craft is consistent. Goodell, who owns a home in Aspen, explains, "Our goal is always to bring high-quality restaurants to the area, with long-term longevity. I know it's needed here—the area deserves it, and the people want it."
