BY EMMA TROTTER PHOTOGRAPHY BY BARBARA KRAFT F rom a giant backsplash behind the bar at Andreas, Encores seductive new restaurant, Andrea Wynns alluring eyes stare out at the sea of beautiful, well-dressed diners through a state-of-the-art LED screen that changes colors throughout the night. Lit low with teardropshaped lights and featuring slick, cream-colored seating, every table in the house fills by 9 PM. The bar area stays crowded with partiers ready to get their night started with cocktails such as the signature Aphrodisiac. With food by popular Las Vegas chef Joseph Elevado and a vibe dining conceptand working in tandem with neighboring nightclub Surrender Andreas blends trendy dining and nightlife into one all-encompassing venue. Its open until 2 AM on weekends, so night owls can keep the revelry going to the sounds of one of Surrenders renowned DJs. (Famed DJ Steve Angello was hired to direct the restaurants music program.) In fact, diners can get stamped for Surrender at dinnerand with the terrace overlooking Encore Beach Club, its a complete nighttime destination three-for-one. And you never know who might show up. A recent night saw George Clooney and business partner Rande Gerber hop behind the bar to launch their tequila, Casamigos. DJs Skrillex, Steve Aoki, and Eric Prydz; Billy Joel; and Jenna Jameson and boyfriend Tito Ortiz have also dined there. Wynn had a hand in both the designcompleted by local guru ToddAvery Lenahanand the menu. The food fuses Asian and Japanese flavors with exotic spices and sauces into many shareable plates: dim sum, sliders, oysters, Dungeness crab fried rice, truffled ponzu rock shrimp tempura, and a Wagyu beef and lobster sushi roll. As far as exotic goes, we are the only ones on the property to offer the Japanese Wagyu rib cap, Elevado says of the decadent entre. The miso-marinated cod, lemongrass beef tenderloin, and diver scallops are also all really popular. Encore Las Vegas, 702-770-3463; wynnlasvegas.com V VEGASMAGAZINE.COM 125 125_V_BOB_G_Opener_Spring13.indd 125 2/11/13 12:23 PM
